Day 9 eating 100% raw

It’s day 9 and I love being 100% raw so much that I don’t want to count the days anymore. When we count the days either we want something to end or we are waiting for something to start. I’m happy the way things are. I’ll keep count just for the 30 days while I’m writing about my experience, but I’ll likely stop after that. This week has been really good despite the non stop rain in San Antonio!

On Wednesday I got my first share of produce from my local CSA. I didn’t know what I was going to get beforehand so it was fun opening the box. Just look at all of this local, fresh, organic produce. Beautiful.

Produce from my CSA

It was nice see my old favorites like broccoli, chard, romaine lettuce, collards and strawberries. I also got some vegetables that I don’t exactly love like parsnips and beets. I guess this will force me to give them another try. I decided to slice the parsnips really thin and top them with my favorite uncooked marinara sauce. The sweetness of the sauce went well with the bitter flavor of the parsnips. parsnips and zucchini with marinara sauce

I also added some of the marinara sauce to some thinly sliced zucchini. I’m totally obsessed with this marinara sauce lately.

Easy marinara sauce

1/3 cup soaked of sun dried tomatoes

1/2 cup cherry tomatoes

1/4 cup red peppers chopped

1 small garlic clove

1/2 tbsp olive oil

pinch of salt and oregano

Put all of the ingredients in a food processor or mini prep and just process until smooth. I like mine just a little chunky.

I also got some sweet potatoes with my order, which I love baked. I am the only one in my family who really loves them. Since I’m not eating any cooked food these days I decided to dehydrate a small batch just to see what they tasted like as chips.

I sliced them with a vegetable peeler and added a small amount of salt and olive oil to them. They tasted pretty good, but I don’t do well on dehydrated foods lately. They just feel too heavy in my stomach especially since I’ve been 100% raw. I had the same experience when I had some of my favorite Mexican flax crackers. The crackers are heavily spiced, which I normally love. But since I’ve been eating much more simply the spice was too much for me. I think I’ll stick to my water rich foods and stay away from the dehydrated ones for now. I am not sure if I will any cooked foods back into my diet after the 30 days, time will tell. I may have to juice the sweet potatoes, I’ll keep you posted on how that goes.

    If you think you don't like beets you need to try a Lithuanian recipe named viniagrettes. I'll see if i can get the recipe from Monika or my mother-in-law so you can make it yourself. Everyone loves it and i think you will too!
