We all know I love salads, I eat them daily. Yesterday I wanted something a little bit different so I made this layered salad, it was quick easy and delicious.
Layered Salad (serves 1)
1 Head radicchio chopped
1 Cup cauliflower florets chopped
2 Large handfuls of sprouts
1/2 Avocado diced (optional)
Layer the ingredients in a bowl starting with the radicchio and ending with sprouts, add dressing to each layer.
Creamy Green Dressing (serves 1)
1/2 Small red pepper
1 Medium kirby cucumber
3 Tablespoons raw cashews
Juice of 1/2 a lemon
1/2 cup cilantro (some stems are fine)
Sea salt to taste
I used a Vita Mix so I didn’t need to add water, if you are using a regular blender add small amounts of water to get the blender going. Blend ingredients until creamy and enjoy.
I love radicchio, I enjoy the slightly bitter flavor and crunchy texture. When I need a change I always make a salad with it. If you don’t like radicchio, butter lettuce would work great. I had this with a side of hummus and some crackers. It was a great meal.
