Raw vegan apple and almond breakfast bowl

It’s fall and the crisp cool weather is here. I’ve been craving apples lately so I wanted to share with you one of my favorite fall breakfast recipes. This recipe was created by Dr. Ritamarie and made on the The Renegade Health show last year. I changed the recipe up a bit, but that is the beauty of raw foods you can do that and still get great results.

Raw Vegan Apple and Almond Breakfast Bowl

serves 1-2

2 Apples chopped

1/4-1/3 cup soaked and skinned almonds

1″ of ginger grated

Pulse all ingredients in a food processor.

Apple Almond Breakfast bowlI used these beautiful heirloom apples, they were slightly tart and went really well with the recipe.

You can top off this mixture with a coconut cream.

Coconut Cream

1 young coconut (scrape inside and reserve the liquid)

1 date

1tsp flax oil (optional)

Blend the coconut and date with just enough coconut water to make a thick cream. Add the flax oil. Spoon on top of the apple mixture and enjoy.
