Typical Wednesday night dinner

I thought I’d share what a typical dinner looks like at my house. Most of you know that my Husband and son eat an omni diet and I don’t. At mealtime our table typically has a lot of different foods on it. Here is what our dinner looked like tonight. Ignore the Legos in the background, this table sees a lot of action.

I made tacos for dinner, it was quick and easy to make and everybody was happy.  My husband had beef and vegetable tacos, my son had a cheese taco and a hard boiled egg (don’t ask), and I had a bean, mushroom and sauteed onion taco.  I also served a salad, sliced vegetables and some steamed edamame.

Here is a close up of my plate, that was just my first serving of salad and sweet potatoes I don’t really eat like a bird.

On Wednesday nights I usually make a quick dinner because my son comes home late from school that day. Some days are so busy that I’m not sure exactly what I’m going to make until right before dinnertime. I always make a salad and to that I add a bowl of sliced vegetables like cucumbers, tomatoes and sugar snap peas since those are my son’s favorite. The rest of the dinner comes together pretty quickly. If I start with a vegan meal and add some meat on the side for the guys, the dinner is usually a success. I know it looks like a funny dinner, but that is what our table looks like most of the time, lot’s of small plates filled with different things. That’s what happens when you live in a house with mixed diets. It creates a lot of dishes to wash, but it works for us.

    it looks good. i’m impressed that that is your quick dinner. i admit, i am lazy, and sometimes that passes into my wife as well, and i dont encourage the greens as much, and salads are not as popular here. i still tend to opt for quicker, processed things, or i cop out and have a pb&j, or a bagel. you are much more inspired about your food. i’m envious :)

      Thank you. I like quick foods too, this salad was very easy to make. The greens and the snap peas were prewashed so that helped a lot. Believe me I don’t like spending a lot of time in the kitchen, to me salads are the ultimate fast food.
