What I ate today

Last month my Twitter friend @slc_vgn came up with a great idea. She thought it would be fun to blog about what we ate for a day to show people how easy it is to eat vegan. I thought this was a great idea and decided to join in. We randomly chose today, but then pushed it back to tomorrow. Since I’ve already recorded what I ate I thought I’d share it with you anyway. Keep in mind this is just one day of eating.

My morning started out like any other, 3 cups of water then 4 cups of green juice. I juiced chard, 1/2 a cucumber, 3 celery stalks,1 green apple and a few chopped up pieces of pineapple core.

The juice tasted great, pineapple cores create a lot of foam.

Oatmeal

Part 2 of my breakfast was a giant bowl of oatmeal and rice milk drizzled with maple syrup. It was 30 degrees outside I needed warm food and lots of it. The crazy thing is just yesterday I was in shorts and a tee shirt.

For my mid morning snack I had a banana, a navel orange and a few tamari seaweed brown rice crackers. Moving on to lunch.

This is when things get a little strange. Today was one of those busy days where I didn’t want to stop and eat lunch. I also didn’t have much in my refrigerator so I got a can of red beans from my pantry and leftovers and put together this little dish. Baked potato, red beans and broccoli. It was fast to make and tasted pretty good. Potatoes and cold weather are a perfect match.

Green smoothie

I made green smoothies for our after school snack. My son had karate so we drank them on the go. Mine had 1/2 a box of spinach, frozen mangoes, frozen blueberries,water, a banana and a few small dates. It was really good. I also had about a cup of baby carrots as a snack.

Avocado

Dinner. Things get even more strange. I started out with an avocado with lemon and sea salt. Then I had some pasta.

And a slice or 3 of bread.

I’m not sure why but this cold weather has me craving carbs. One can only hope Punxsutawney Phil will not see his shadow tomorrow because I can’t take 6 more weeks of carbs. So there you have it a day of very strange eating, but days like this happen to all of us.
