Sundays are usually pretty relaxed around here. Yesterday while my son played Minecraft, I framed some art. There is nothing cuter than children’s art. My son painted these a few years ago and they still make me smile every time I look at them.

I had such a great time framing these; it reminded me why I started my framing business in the first place. I love to be around children’s art. I’ve since closed it so that I could spend more time with my son, a decision I’m still happy about. I did have a sense of nostalgia as I worked on these though. When I am consumed in a relaxing activity I always forget to eat.
I knew my son would not move from the computer so I set out some snacks on the island in the kitchen and called him over. I could tell he was still hungry by how quickly he inhaled the apples I cut up for him, so I made a quick bean puree.
This was so easy to make. I whipped it together while my son and I chatted about, you guessed it, Minecraft.
White Bean Puree
1 15 oz can Cannellini beans
1 Tablespoon lemon juice
2 Tablespoons raw apple cider vinegar (Braggs tastes the best)
1 Small garlic clove minced
1 Tablespoon olive oil
1/2 Teaspoon minced thyme
Salt to taste
If you are using canned beans be sure to rinse them well first. Pulse all the ingredients in a food processor until smooth. If you want it chunky keep an eye on it because these beans are very soft.
The apple cider vinegar is they key ingredient in this whole thing; it gives it a sharpness the lemon alone cannot. I served mine with cut up carrot sticks. My son ate two carrots worth.
